Best Roasted Delicata Squash Recipe

I roast the squash the same as Chef John, but he makes a sauce of mayo, garam masala, turmeric and paprika. While the sauce is great (like pretty much everything by Chef John) I don’t think it really complements the delicata so well, since it kind of overwhelms the taste. So, here’s the way I like to make it!
Ingredients for 2 portions:
1 large delicata squash
1 tablespoon olive oil
1 teaspoon salt
½ c. mayo
½ juiced lemon
½ finely diced shallot
salt to taste
- Make sauce. The longer it sits before serving the better it tastes.
- Wash delicata, cut delicata in half, de-seed. Note that you don’t have to peel! The peel is edible and delicious.
- Slice into ½ inch moons, as pictured above.
- Roast at 450 F., for about 12 to 18 minutes, depending on how thick your slices are. I like to flip halfway through so both sides are browned.
Serve with sauce on the side for dipping. It works very well as a warm appetizer – so long as you provide napkins for salty fingers!
